Why do people use alcohol or drugs to cope from a scienfitic/psychological stance?

They affect different portions of the brain that cause the emotional trauma a person is trying to escape.

For example, people with anxiety might turn to alcohol because it produces a drowsy, sleepy effect, thereby helping them feel “relaxed” or slow their brain down. Or, people who are depressed or trying to get their minds off of something upsetting might take a drug that stimulates dopamine, the body’s “feel good” chemical.
