Why do people who work out a lot (especially football players it seems) look like they don’t have shoulders?

I think you mean “neck”?
Answer: very developed trapezius muscle.

The trapezius muscles, between the neck and the shoulders, are the muscles that get large and make these guys look like their shoulders are gone. All muscles have a use, and pulling in an upward direction is one of the uses of those trapezius muscles. The actual shoulder muscles, the deltoids, are also important, of course. If you are a fan of “Gilligan’s Island,” you may remember that the professor once complimented Mary Ann on her deltoids.

To this day, I like to compliment women on their deltoids, when it’s appropriate.
