Why do scabs become itchy?

Cells in the wound start multiplying to regrow the damaged area. As they meet in the center, they begin to tighten to pull the wound shut. The mechanical (physical) process of this tightening triggers the nerves in the skin, similar to a bug crawling on your arm. This gives you the itchy sensation.

It’s important not to scratch it though as you want to allow the wound to heal under the scab. The scab (dried blood) is there to protect the wound until healed.
