why do scammers try to get you off of text and into apps like WhatsApp? What are they doing?

WhatsApp is end-to-end encrypted so in theory the message only exists on the two phones. If they have disappearing messages enabled, then the messages get wiped out automatically. This would eliminate evidence of the crime.
Text messages (that aren’t RCS) are not encrypted and stored on phone company servers for an indefinite period of time.
