Why do some food combinations taste terrible even if the individual foods taste good themselves?

Flavor is just chemicals….you can take two totally safe, inert chemicals and slosh them all around no problem at all……but if you mix them together and then shake em up KABOOM

Same thing applies with taste and scent….two sets of chemical “signatures” mixed together into a new third combination that doesn’t work
