Why do some fruit such as apples, cherries, strawberries, tomatoes etc. Turn red or change color once they are ripe?

During the riping process, certain enzymes in the fruit come into action. Enzymes react with other molecules in the fruit, such as, but not limited to chlorophyll (the green pigment in a lot of fruits). This results in sometimes releasing pigments of other colors, thus changing the color of the fruit.
