Why do the wood from the trees being cut take two years to dry out but Christmas trees are a fire hazard because of how quickly they dry out? What gives?

All of the tiny needles and small branches on a Christmas tree have a lot of surface area and dry out way faster than the actual wood inside the trunk.

It’s the solid wood inside a tree’s trunk that can take years to dry. A Christmas tree’s needles can be dry brown tinder in a few weeks.
