Why do things like lighting fires and getting chased give you such a thrill when you’re young?

The flight or fight response of the nervous system is probably involved in these “dangerous” things. Think about these things happening on a larger scale as an adult. If you light a huge bonfire that may get out of control or get chased by a dog/masked man, you get a pretty good adrenaline rush. I think it is the same for children but a much smaller scale suffices to provide a rush for the youngins.
