Not an expert but I’m pretty sure it comes down to the position you fall asleep in and, you know…gravity

The first part of your question “why do we drool when we sleep” is answered simply because you’re not swallowing saliva throughout the night but still producing it. The second half I think might come down to the angle (whether the drool is coming out of your mouth or slipping down your throat) or if you sleep with your mouth wide open and it dries out instead. But I’m not an expert.
