I am certain it is something to do with oxygen and our nervous system, just wanted more insight into the process(es) being interrupted that cause this and why that is what we see. Thanks!

It’s a phenomenon called “photopsia” and because of this the technical term for the stars are “phosphenes”. When they happen at the same time as lightheadedness both are symptoms of a sudden drop in blood pressure to the head/eyes/brain. Unfortunately there isn’t really a super great explanation for exactly, exactly why they happen but the sudden drop in blood pressure causes malfunctions in the retina and/or optic nerve. The shape and patterns they take up probably correspond to the physical layout of the blood vessels in those parts of our eye. They can also be induced if you press or rub your eyes creating *higher* pressure than your eye is calibrated for.
