You need to maintain a balance of salt and water in your body. Anchovies and most salty “real food” tends to also contain some amount of water, so you’re consuming both salt and water, which offsets some of the thirst that is going to trigger.
Most salty snack foods are *very* dry. They have a lot of salt content and very little moisture. So eating salty chips is going to throw your body’s water:salt ratio off more than eating something like anchovies or a salty soup will.
