Why do you usually have to hold down the gas button for a few seconds when lighting a stove or gas oven to keep it lit after you release the button?

In what country?

I have never seen a device like you’re describing on any gas-operated stove in the US, UK, or Singapore.

There is a thermo-couple that shuts down the gas supply if there is no flame. It needs to warm up @ the start. If this wasn’t the case you could flood the room with gas.
