Beer contains dissolved proteins from the grain used to make it. There’s not a lot, but it’s there. Those proteins are able to form loose networks of themselves, and catch the released CO2, making it foamy.

You see the same thing in root beer. Originally the proteins came from the natural sassafras root used to flavor it, but were replaced with yucca root extract or other agents to replicate the distinctive head
