The aerosol used to spray out the whip cream is not compressed air Typically it’s some kind of neutral gas like nitrogen. Meaning 2 things 1) the can is never exposed to floating mold and other microorganisms 2) the fat and protein in the dairy will oxidize and cuddle much slower since they aren’t exposed to oxygen.
