Why does chocolate turn white when it gets old?

The surface of chocolate may turn white for two different reasons.

When the air around the chocolate has a lot of water in it, the water can make sugar in the chocolate melt. Sometimes the chocolate can also sweat little bit like a cold drink on a warm summer day. When the chocolate then becomes dry again, the sugar unmelts and white sugar crystals appear on the surface of the chocolate. This called sugar bloom.

The other reason is called fat bloom. It can happen when chocolate warms up and cools down fast enough and the fat inside it pushes itself out of the chocolate.

Although it might not look good, it is still okay to eat chocolate with sugar or fat bloom.
