Why does food have less taste when your nose is plugged?

To start off, your mouth eyes and nose are a lot more connected than people realize. It’s why spicy food makes your nose run and eyes water. That connection is part of what makes smell an important part of taste.
When you “taste” something that sensation is a mix of what your taste buds say as well as what your nose says. Your brain does this connection naturally 24/7. So when you plug your nose you’re stopping one of those inputs that the brain is expecting. Making the food taste “different”.
