Food poisoning is a broad term for many different things. In some cases it’s caused by actual bacterial infection, in other cases it’s caused by toxins produced by bacteria and left in the food. So depending on the type of toxin or the type of bacteria, the speed of onset, type of symptoms, and duration will be different.

To explain, I would like to mention my favorite expression regarding spoiled food. “Your food never spoils, something else is just eating it before you do”. The food itself doesn’t make you sick, microorganisms do. This applies to all sources of food poisoning. Because it’s microorganisms, it’s how long it takes for those specific organisms take to clear that determine how long you have food poisoning. Also, there are several things that cause food poisoning. Hence, the differing times.
