Although picked fruit is no longer alive, it still has cells inside of it. Dropping fruit can damage those cells, often causing some to burst. When they do, the chemicals inside different types of cells can react to each other and to oxygen, and the reaction makes new chemicals that make the apple look different. If you’ve ever looked under a bruise in an apple, it probably looks a bit brown and mushy. This is the same as a cut or eaten apple that’s been left out for too long – the same kind of reaction is happening.
