The Microphones have thin metallic, rubber or any other piece inside which is diaphragm. Now that diaphragm is very sensitive to sound waves which travel through hitting atoms in the air.
So if you blow into the microphone you’re basically making the diaphragm go haywire thus making it sound so damn loud

Microphones pick up on air pressure differences. When you talk, you change the local pressure of the air ever so slightly when you speak. When you blow onto a microphone, you drastically change the air pressure compared to when you speak, resulting in an extremely loud noise
