Mint contains menthol. Menthol is a compound which triggers a protein responsible for signaling the sensation of coldness to the brain. Basically, it tricks your body into thinking it’s cold in the same way capsaicin tricks your body into thinking its hot.
These proteins are meant to react to temperature, triggering signals when the temperature is colder than usual. Menthol binds to these proteins, causing the same response.
