I know that a bruise is essentially pooled blood, but why does it hurt to poke it? Does the blood somehow affect the nerves?

Part of it is because the bruise is a damaged region. The nerves are on high alert to tell you “HEY DONT TOUCH ME I’M BROKEN” so it can heal without interruption.
