why does switching off the A/C when the ceiling fan is on reduces the coolness of the room immediately ?

The A/C is blowing air that is colder than the room’s temperature. When you feel the cold air, you feel colder.

The fan can’t cool air down, it can only move air.

So when you turn off the A/C, cold air stops entering the room and the fan is moving around air that’s whatever temperature the room is. That’s likely warmer than the A/C air was. (For example, my A/C usually blows 10-20 degrees F colder than the ambient air.)
