It’s a secondary sexual characteristic. 

Long time ago, when humans were emerging, it was difficult to tell women from men, so reproduction got weird. Eventually evolution rewarded us with secondary sexual characteristics so that we could more successfully tell each other apart for mating purposes. An engorged Adam’s apple is a result of that evolutionary process.
