Why does the blue colored candy (like Skittles or M&Ms) color my tongue blue when the other’s don’t?

They all do, you just don’t notice.

Your tongue naturally contains red and orange pigments so you don’t notice them.

Yellow would be more noticeable but because of the way color works the lighter “yellow” pigment from the candy is “overwritten” by your tongue already being a darker red color.

Blue, green(though lighter green candies run into the same issue as yellow), and purple are not really “natural” colors for your tongue to be so they are more readily apparent and they are “dark” enough to be noticeable over the natural colors of your tongue.
