why does water stay cool even on a hot day?

Water is a great insulator.
I think this may be the reason why it stays hot during the night in humid environments in the south, and get’s cool st night in like a desert.
The moisture in the air in the south actually retains heat for the night time, while deserts get very cool at night because there is not air moisture.
