Why does water stop smells from entering it?

If you have a water trap on a toilet, how exactly does water prevent smells from entering it from the waste pipe, then passing the smells through so they come out of a toilet?

It creates a barrier preventing the gases from escaping. Smelly air won’t get past the bit of water in the s bend
