why does water taste weird if it’s been frozen for long periods of time?

Well, depending on how it’s sourced and stored. Tap water can have chemicals and other deposits in it that seem to affect taste when frozen. Using bottled or RO water would reduce this greatly. Also if the water is stored in a freezer with other food, the water can leach some of the smells from the food and the smells can affect your taste.

Because it’s been picking up crap from your freezer. If you kept it sterile, it’d taste the same indefinitely.
