The “fizz” of sodas and beer is actually carbon dioxide. In the case of sodas, they just pump it pressurized into the soda, and it dissolves in the water. In the case of beer, carbon dioxide is produced by the fermentation process that’s part of making beer.

In any case, it’s carbon dioxide. Carbon dioxide can dissolve in water and react with it, forming carbonic acid. Lemon juice, vinegar are also acids; your taste buds are used to tasting some of these mild acids, they taste sour. However, your nose is too sensitive for acids, so if you get carbonic acid, vinegar, or lemon juice in your nose it stings / burns.

So basically, when you burp, you burp carbon dioxide, which contacts the wet insides of your nose and forms carbonic acid, and because that’s an acid, it stings.
