why don’t humans start to “cook” after being in hot tubs for hours? (Or even saunas)

Your body has natural cooling mechanisms. Not to mention hot tubs are not that hot compared to us. Most are in the 100-105 degree Fahrenheit range. You aren’t going to cook meat at that temperature.
