Why ice cream with crunchy pieces turn soggy

Let me explain, obviously it’s going to get soggy over time but why isn’t it when you open the carton? For example: Ben and Jerry’s Americone Dream has chocolate covered sugar cone pieces. When you open the carton they deliciously crunch, but if you don’t finish the carton and put it back in the freezer, the next time you take it out they are soggy and chewy. I know the chocolate coating helps protect it but it’s not like it just goes away because the container is open! Why are they crunchy until they are opened then they’re soggy?

Because everything is frozen straight from the factory. When you start eating it, the ice cream begins to melt and softens up the pieces of cone.
