why is cooking oil yellow and not any other colour ?

Oil color comes from the original fruit/nut/flower it was derived from so olive oil can range from dark green to pale yellow and coconut oil is usually white/clear. Cooking oil is usually sunflower or vegetable which would derive from various fruits, nuts and seeds, hence the usual yellow color.
Maybe you’re thinking of canola oil, which is made from corn. Olive and avocado oil can be clear or greenish.
Triacylglycerol/fatty acids/lipids absorb blue light.
