Take your kitchen knife and try it. If it cuts super well you’ll be very impressed with the sharpness of your knife. If it doesn’t you’ll want to sharpen it

It’s not, exactly. It’s just that the way it cuts the paper is a good indicator of how sharp it is. The amount of tearing or smoothness of the cut shows fineness of the knife edge.

When holding the paper with one hand, dull knives will make a dirty cut or cause the paper to bend over instead of cutting cleanly.
