Chicken wings coated in a mixture of “Franks Red Hot” sauce and butter became popular in Buffalo, NY. They were first served at the Anchor Bar downtown.
Poor folks everywhere used to eat wings, because they at one time were considered a secondary by-product of the chicken, and the other cuts were more expensive. Buffalo, having the economic rug ripped-out from underneath it as the mills and granaries left, and the ports closed, subsisted like any other struggling city. The Anchor innovated by making a common poor folk food into a commodity bar food, and killed it.
