Why is it so hard for me to do things with my non-dominant hand?

For instance a left hand layup or writing. Especially if I can visualize what I want to do?

Because in most cases, being ambidextrous is redundant. The advantage of being able to write with your non-dominant hand is only relevant very rarely. The cost is brain capacity and brain development time. That brain space and development saved means more available for other things, like learning language, social skills, how to walk, or wasting our time scrolling on reddit.
