Why is it that all of yesterday’s food passes through stomach acid and dozens of feet of intestines, yet sweet corn comes out whole?

It doesn’t. The inside of the kernel gets digested, and the outside shell part does not. The shell part then gets filled with poop to make it look like a whole kernel again.

The skin of corn is resistant to acids. If you chew them well you will digest the inside just like everything else.
