I’m not totally sure why but some countries don’t refrigerate them. I thought it was odd seeing them sitting on a shelf without being refrigerated when I visited Japan. But here in the us it’s best to keep them in the fridge.
Edit because I did a quick google search and it said Europe and places vaccinate the chickens from salmonella and don’t was the eggs and leave the cuticle intact. Also when we use them to bake the heat is killing any bacteria present
