Why is Pork/pigs regarded as a “dirty” source of meat?

Im aware that pigs/boars eat whatever, does this affect the meat we eat in any way?

yes, it does!! some pig farms have 3 “levels” of pig feeding areas. the floors are made from grates (aka stuff can pass through) and they will often only “feed” the top floor. (from a pal who worked at several farms when she was younger)

anecdotally, i had clinicals on a kidney/liver/GI floor at a hospital in NC and several of the older nurses noted that they had a LOT of folks come in from eastern NC with lots of GI issues and they saw a notable correlation with folks who consumed a ton of pig products (usually bc they worked in some part of the pork production process.

and, you can taste the difference. spain has a fancy meat called Iberico ham and its from pigs that mostly eat hazelnuts and it will ruin american pork for you. even when an american company uses the same recipe, the taste and quality of the meat is so different. (i acknowledge that this last one is “i sPeNt a sEmEsTeR in BaRcElOnA” and i accept it!)
