You’re willingly holding back your body’s gut reaction to eating something sour: spitting it back out. Our sour taste is for detecting acidity.

It’s a rejection response. Generally (exceptions apply), sour = acid and acid = bad.

From an evolutionary perspective, when things rot, they get acidic. Rotten food is not good for carrying on your genes, so our bodies learned to avoid rotten food.

I would assume it is a reflexive response for protection from the acidity, you scrunch your face up closing your eyes and pursing your mouth to prevent delicate parts being damaged. There may have been cases where it was not voluntarily put in the mouth and those with the reflex were spared damage
