why is there a physical reaction to the face when you eat something sour?

I would assume it is a reflexive response for protection from the acidity, you scrunch your face up closing your eyes and pursing your mouth to prevent delicate parts being damaged. There may have been cases where it was not voluntarily put in the mouth and those with the reflex were spared damage
