Why when my abdominal fat is centrifuged, it end up being 50% oil ?

For a little context: I had a lipofilling recently and I was somehow concerned about the fact centrifugation.
Looking for an explanation I’ve tried to read some scientific papers but it was just too difficult to understand.

Oil is fat. All that “fat” is adipose tissue, which are cells designed to store fat. So the cells are all full of oil because that’s what those cells are for. Like, say, olive oil. It’s pure liquid fat
