How do they measure the sweetness of other sweetners, but artificial and natural, in comparison to sugar?

They gather a number of people who are trained taste testers and the give them glasses of water. Each glass has a little bit more sweetener in it. The tasters keep tasting with slightly more sweetener in each glass until they can taste something different about the water – not necessarily sweet, just different. Once half of the tasters have tasted something different, they’re able to determine how much sweetener was used in the water versus how much sugar is used to get the same result.
