This is due to many factors. For example, grain today contains more gluten than in the past. Or: we get older and the immune system changes. Or: an intestinal disease changes the intestinal flora.

As a celiac, it took my body so many years to finally have my intestinal villi break down enough to trigger an outward response. I was always allergic, but my body handled it as well as it could, although in hindsight the IBS-type symptoms were always there. Fuck gluten/celiac/coeliac disease.
