eli5: How can you eat something you’re entire life and then suddenly become allergic to that food / food type overnight?

As a celiac, it took my body so many years to finally have my intestinal villi break down enough to trigger an outward response. I was always allergic, but my body handled it as well as it could, although in hindsight the IBS-type symptoms were always there. Fuck gluten/celiac/coeliac disease.
