eli5: How is it that certain surgeries can take several hours?

I understand that certain surgeries can be very technical and require a lot of skill and even a couple of hours, but I don’t understand what would make a surgery last upwards of 5 hours. That seems like a lot of time for cutting someone open and fixing them up.

I would imagine, doing a repair or transplant would take a lot of time because repairing all the veins and capillaries would be tiring. Imagine having to fit together hundreds of tiny tubes and ensure there are no leaks. Also, with a transplant, you’d have to cut all the arteries and bind them so they wouldn’t leak while removing the organ, and then untie and reattach them afterwards.
