eli5 Olive oil spice level

Why are some olive oils very spicy, some buttery? More interested in why so spicy sometimes. I never thought of an olive as being something that’s spicy. Thanks!

The olive oils you describe as “spicy” are likely rancid. With oil, rancidity is just about flavor, not about foodborne illness. Check out [this ](https://www.cooksillustrated.com/articles/2978-how-to-tell-if-an-oil-is-rancid)article to learn how to tell if your cooking oil is rancid!

I don’t think any olive oil would be “spicy” by itself, that’s probably due to the oil being infused with peppers or other spicy foods.

As to “buttery”, some oils are produced from different olives, or different pressings, and the characteristics of the oil may vary, producing flavors that might be considered “buttery” or “mild”.

Edible oils are fats, or more technically, ‘fatty acids’.
When this acid hits a section of the digestive tract with low mucous protection (such as the back of your throat), it’s “Momma Mia!”.

Just get it over your taste buds and down into your well-protected with-mucous stomach however, and you’re fine.
