Why are some olive oils very spicy, some buttery? More interested in why so spicy sometimes. I never thought of an olive as being something that’s spicy. Thanks!

Edible oils are fats, or more technically, ‘fatty acids’.
When this acid hits a section of the digestive tract with low mucous protection (such as the back of your throat), it’s “Momma Mia!”.

Just get it over your taste buds and down into your well-protected with-mucous stomach however, and you’re fine.
