ELI5. When laying tiles, why do we put furrows in the mortar/adhesive?

I’m pretty sure its to control air pockets under the tiles, so you don’t risk cracking them. A smooth surface could never guarantee no air pockets, but the furrows actually force uniform air channels that allow the tile to be pushed down evenly and supported evenly.

The furrows create suction with the air pockets. This keeps the tile on and allows the adhesive to dry.
