ELI5. When laying tiles, why do we put furrows in the mortar/adhesive?

I’m pretty sure its to control air pockets under the tiles, so you don’t risk cracking them. A smooth surface could never guarantee no air pockets, but the furrows actually force uniform air channels that allow the tile to be pushed down evenly and supported evenly.
