Eli5: why would someone develop a sunburn on one day and a suntan on another day?

South Texas resident that spent a LOT of the summer months without a shirt while growing up. The first couple of days after school let out, that peach white skin burned pretty easily. As the summer went on, you could stay out longer and longer without a burn. Could have passed for an illegal immigrant by the end of the summer.
Medical basis for this? None what so ever, just how it happened. Long term damage? Likely. Don’t think about stuff like that as a kid.
