It’s called the Leidenfrost effect. Basically the hot led causes the moisture in your mouth to evaporate instantly which creates a (temporary) protective layer of vapor.

You can do the same thing with liquid nitrogen where the head of your mouth causes it to evaporate and create a similar protective layer.
